Ice Cream Ramen

The dessert ramen of the future!


Ingredients

Noodles
300g preferred juice or flavored/sugar water
1.0g agar, 0.33%
1.0g locust bean gum, 0.33% (optional)

Other
Mochi balls
1 Cantaloupe (or your choice of fruit)
1 Mango
Flavored syrup
Crushed Ice + Evaporated Milk
 How to make this recipe

Step 1: Noodles
There are two ways one can prepare the noodles:

1.
Prepare an ice bath to set the gel in.

Place the juice/water in a pot. Sprinkle in the agar and locust bean gum and mix well with an immersion blender. Bring to a simmer while stirring occasionally. Let simmer for 3 to 5 minutes.

Fill a syringe with the gel base, attach it to a section of tubing, and then push the gel into the tubing. Remove the filled tubing and place it into the ice bath. Once the gel has set for 2 to 5 minutes, fill the syringe with air, reattach it to the set tubing, and push the gel out.

Repeat for as many noodles as you want. You can also make several noodles at once if you have multiple sections of tubing.

Once the noodles are made they are ready to be served or can be refrigerated, covered, for several hours.

2.
Do as the above states, but instead of using a pot and syringe, use a pan (spread the gel thin, depending on how thick you want your noodles) and wait until the gel has cooled, then cut the sheet into noodles of desired width and length (they’ll come out more rectangular, like in the above picture).

Step 2: Ice Cream
Once the noodles are finished, take a bowl of crushed ice and pour evaporated milk (or coconut milk) over it. Cover this with mochi balls, frozen cantaloupe balls, and mango chunks (you can substitute any fruit you’d like, of course).

Step 3: Top It Off
Carefully place the noodles on top of everything. You can pour a flavored syrup over everything once you’re done, and bon apetit!
