Woo, managed to make this today!

Entrant Name: stickytoffee
Name of Entry: Browniehome
Recipe and Description: A large brownie modeled after Dragonhome using cookie chunks, a Milky Way Crispy Roll and a light dusting of icing sugar.

Ingredients:
175g plain flour
1tsp baking powder
325g caster sugar
275g dark chocolate
4 eggs
1tsp vanilla essence
275g butter
Icing sugar
Biscuits/cookies of whichever kind you prefer
Something edible to act as the pillar (I used one of these)

1. Preheat oven to 170C/gas mark 3
2. "Paint" inside of baking tray with melted butter, then line with grease-proof paper.
3. Crack 4 eggs into a bowl and beat lightly.
4. Add a teaspoon of vanilla essence.
5. Measure out the plain flour and add 1 teaspoon of baking powder, sieve these two into your main mixing bowl (a separate one to the eggs).
6. Put the plain chocolate in a large bowl and place over a pan of simmering water. When melted, add the butter and stir until both are blended together.
7. Take the chocolate off the heat and stir in the sugar.
8. Pour this into your main mixing bowl, then add the eggs.
9. Fold in the mixture.
10. Pour into baking tray.
11. Bake for 20-25 mins.
12. Take out and leave to cool. When cool, add your decorations! I used a knife to carve places for the cookie bits and the pillar to make them easier to push in, and to emphasise some of the cracks (though the brownie looks pretty rocky already.) The icing sugar layer isn't mandatory but I thought it added to the earthy/dusty feel.

Mix it together to blend this into the rest of the filling. It’s tasty and adds a nice texture. (see bottom two photos) Roll chilled dough on floured surface to a thickness of approximately 1/8”. Use a ring cutter or a bowl of about six inches in diameter to cut out rounds. Place one dollop (large heaping teaspoon) of filling the centre of each circle. Moisten the edge of the circle using water or milk. Fold the dough in half, forming a crescent around the filling, and crimp the edges together. I am lazy and used a fork, you can make a more decorative edge if you prefer. Poke some steam holes in the top of the pasty with your fork. Paint tops with egg wash or milk. I was out of eggs and used milk, but eggs will give you a more golden top. Place them on a greased (or Silpat) cookie sheet, close together but not touching (see second-to-last photos). This recipe will yield roughly two dozen pasties, with a little bit of filling leftover. You can eat the filling as-is, just with a spoon, if you’d like, since the eggs will have cooked in the first bake. Bake for roughly 30 mins, until pie crust is flaky and golden. Let cool before eating - the filling will be very hot! Recipe and Description: Warm and comforting, these little hand-held pies, inspired by Harry Potter, are the perfect holiday snack. From Halloween straight through to Christmas, they're a great way to enjoy the seasonal flavours of pumpkin spice.

Crust
  • 1 package shortening (Crisco)
  • 4 cups flour
  • 1 cup water
  • 1 tbsp white vinegar
  • 1 egg - divided

Cut shortening into flour until it forms small bits
Add egg yolk, water, and vinegar to flour/shortening mix
Blend to a paste
Beat egg white to stiff - but not dry - consistency
Add to dough and mix (use your hands)
Form paste into log, wrap in cling film, chill until firm

Filling
  • 1 large can (796 gr) pure pumpkin - not pie filling!
  • 1 can sweetened condensed milk
  • 3 eggs
  • 1 tsp cinnamon
  • 1/2 tsp ground dried ginger
  • 1/2 tsp ground nutmeg
  • 1/4 cup maple syrup
  • pinch salt

Mix in casserole dish, bake uncovered until semi-solid (40 mins at 375)
Let filling cool

Assembly
The top of your filling should have formed a semi-solid skin. Mix it together to blend this into the rest of the filling. It’s tasty and adds a nice texture. (see bottom two photos)

Roll chilled dough on floured surface to a thickness of approximately 1/8”.

Name of Entry: Chunky Chili
Recipe and Description:
I like to cook my own version of chili before Thanksgiving, to give us the ability to starve ourselves for the feast the next day...and have a snack if we need it. (It can also help the after-effects of eating so much Thanksgiving day!)

Ingredients:
  • 1 lb ground beef
  • 1 lb chopped steak (I like to use stew meat)
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 1 can light red kidney beans
  • 1 can dark red kidney beans

Seasoning Ingredients:
(These can be adjusted. This is a mild chili. Feel free to add more cumin/cayenne pepper to get more heat.)
  • 1 tsp paprika
  • 2 tsps ground cumin
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 2 tsp garlic powder
  • Dark chocolate powder (add to taste. I tend to add a lot. The darker the chocolate, the better.)
  • 1/2 bottle dark beer (Try a lager with this. If you add beer, expect to get intoxicated. It does not cook out.)

Directions:
  1. Cook ground and chopped steak until brown in saucepan. (If you cook the chopped steak separate from the ground beef, you can have more tender pieces.)
  2. Combine with sauce and tomatoes.
  3. Add seasoning and let simmer for 10 minutes.
  4. Transfer sauce and meat to big pot. Add beans.
  5. Simmer for as long as you desire. Minimum time is 30 mins. Maximum time is...well infinity really. Especially if you have a crock pot.
