Name of Entry: Carrot Cake Cupcakes
Recipe and Description: Delicious Carrot Cake Cupcakes with Cheese Cream Icing and crushed chocolate topping! I have a feeling my plant eating dragons will love this carrot, mouth watering dessert (and for a gag, (maybe literally) all you tricksters out there, you can give this to that friend or sibling of yours that hates veggies ;)
This will make a minimum of 22 delicious cup cakes!
You will need:
Cake:
- 2 cups sugar
- 2 cups flour
- 4 extra-large eggs
- 1 1/3 cups vegetable oil
- 2 teaspoons baking soda
- 1 teaspoon pure vanilla extract
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons kosher salt (regular salt also works)
- 3 cups grated carrots (less than 1 pound)
- 1 cup raisins (optional)
- 1 cup chopped walnuts (optional)
Frosting!:
- 3/4 pound cream cheese at room temperature
- 1/2 pound unsalted butter at room temperature
- 1 teaspoon pure vanilla extract
- 1 pound confectioner’s sugar (icing/powdered sugar)
Toppings!:
For this I used Cadbury's Mini Eggs
I have also used crushed Toblerone in the past (It tastes just as delicious)
You can also use shredded carrots, raisins, or walnuts as toppings (I just like chocolate though)
Now preheat the oven to 350 degrees.
In one bowl, beat;
2 cups sugar
1 1/3 cups vegetable oil
1 teaspoon vanilla
and

extra-large eggs
(Extra-large is extremely important or the cakes will not rise! do not attempt to use multiple small eggs either, I have tried this and it failed as well!)
In another bowl sift;
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1 1/2 salt
Then add half the dry ingredients to the wet, stir well.
Add the 3 cups carrot shavings, raisins, and walnuts to the other half of dry ingredients, and mix well. add to the wet batter and mix. (I recommend adding a bit then stirring, as the carrots can be tough.)
Put the muffin papers into the pan and fill cups 3/4 way full. (I recommend taping the pan softly on the counter to pop any unwanted air bubbles.) bake for 30mins, and use a toothpick to be sure it comes out clean. (This is to make sure its 100% baked!)
Now for the frosting!
cream; 3/4 pound cream cheese
1/2 pound butter
1 teaspoon vanilla
Into the bowl of an electric mixer (paddle attachment)
Add 1 pound icing sugar
beat until smooth!
When cupcakes are cool, top them generously with the icing, add topping and serve with a smile and be proud of your work!
