How do you justify breed changes in your lore?
Things like scatterscrolls and genes I figure are just magic items that are used cosmetically and I think breed changes would be similar but why would a dragon want to change their breed?
Also what about charges for guardians? If a dragon changes into a guardian do they suddenly feel a drive to find a charge? Do guardians who breed change stop having a charge?

I honestly just assume they ate the magical scroll and just poofed into a new breed. And then they're suddenly hit with the urges to do all the things a dragon of that breed is known for doing and stop kinda caring bout their previous particular breed specific things.

i feel like it's never a complete shift, for instance the theory of Scribbles being changed from a spiral since they have a sort of spike on the end of their tail.
i personally don't care much about specific breeds having specific personalities, but here are some ideas:
-dragons changed to mirrors don't have the same vicious, pack demeanor
-dragons changed to skydancers don't have as strong a sense of detecting emotions
-dragons changed to pearlcatchers will start a pearl from a random object, but won't care much about it
-dragons changed to guardians may have a charge, but similar to pcs won't have as much of an attachment.
-previous pearlcatchers may stop caring about their pearls
-previous guardians might struggle with still wanting to protect their charge
-previous nocturnes might struggle with finding a new identity
maybe an imperial was afraid of becoming an emperor or accidentally injuring a smaller dragon, so they became something smaller. maybe they needed to better adapt to their new home, like if a snapper got tired of not being able to fly and wanted to become a spiral, maybe a tundra was too hot but wanted to work in the ashfall waste and became a coatl (though that wouldn't help with how flammable they are)

I see it as they sometimes dont do things that the breed they become does, Like for example breed changed guardians do not have charges and they may be looked down upon by born guardians because of it.
Breed changes are basically just dragons reading a scroll then going through a transformations

With mine, all the scrolls are kinda like a lottery. You gonna change colors? Become a Guardian? Sudden immortal babification? Who knows!
