I’ve gotten my dad to watch a couple episodes of One Punch Man and he loved the Blade Runner short but I’d like to find more he might like. My mom is interested in historical stuff but doesn’t usually go for animation so I’ve only gotten her to watch some live action adaptations. These are a few I’m considering for showing my dad and I’d love to hear if you think they’re good ideas, especially since I haven’t seen all of them:

I'd start with good gateway series like Bebop or FMA Brotherhood, and maybe a Ghibli like Nausicaa of the Valley of the Wind. Samurai Champloo and Parasyte may work as well?

I usually don't have much luck convincing others to watch my shows, but I think 91 Days should be good to show your dad. Maybe your mom too, since she likes historical stuff? If your mom likes romance, maybe try Emma: A Victorian Romance?
I never watched the other shows you listed but I second FMA Brotherhood and Boku no Hero Academia.

Seconding Ghost in the Shell, the general atmosphere of the film is very similar to that of Blade Runner. If you liked one, you'll probably like the other.
My grandma was never really into anime, but when I showed her Death Note she started getting into it. But I think Death Note is a bit hit-or-miss. There isn't much action, and the nihilistic viewpoint might turn people away.
And, of course, Studio Ghibli films. The gateway series.

I second the gateway idea. I got my Irish catholic father into anime by showing him Fullmetal Alchemist: Brotherhood. If your mom is really big on historical, I strongly suggest Ghibli's From Up on Poppy Hill, Totoro, Howl's Moving Castle, and The Wind Rises. Similarly, your dad might like Nausicaa of the Valley of the Wind, Princess Mononoke, and Castle in the Sky. Good luck!
