It's a tough one, but recently I've been in love with Carole & Tuesdays opening and ending songs. Another one that I've listened to a lot recently is Girls' Last Tour opening and ending.

off the top of my head:
the jojo op's have some real bangers. sono chi no sadame, bloody stream, and fighting gold are probably my favorites but theyre all great.
THE HUNTER X HUNTER (1999) FIRST OP AND ED ARE SO GOOD and fill me with sadness/happiness. ohayou and kaze no uta.
inuyasha is really weird in that the op is super "who cares" but the EDs are amazing and hit me in the face with cozy nostalgia feelings every time.
the first three attack on titan OPs are hype as hell.
the first mob psycho op is top tier.

I really like .hack//SIGN's opening (Obsession). Also, Cowboy Bebop's opening - I used to dance every time it came on! For endings, I love Neon Genesis Evangelion's Fly Me to The Moon!

Attack on Titan's second opening, Jiyuu no Tsubasa, is fantastic, of course.
I also love the opening to Gangsta, Renegade. It's so fresh compared to a lot of anime openings.
In addition, the opening to Otogi Zoshi, Zen, is fabulous.
Finally, Prism, the opening to Dennou Coil is grand as well.
Though it's worth mentioning that my sister and I will duet to the opening to Outlaw Star at the slightest provocation and have an enduring love of the opening to The Big O for reasons unrelated to its quality.
