This is just a question of my own curiosity. I'm wondering if I should go all in with maxing a single skill at a time instead of alternating between them every day.
Right now, I stand at about halfway through level 28 on Fishing, Hunting, Foraging and Insect Catching, while Scavanging and Digging are at level 22. (Been neglecting them for the time being.)
I have over 22k food points in all four, so I should have plenty to last, but should I go all in on one skill at a time and max them out?

In most senses there's no particular benefit to having maxed gathering (you could argue there's a negative - while you'll average more food points, your chance of gathering specific items is at its lowest). However, being evenly levelled gives you the greatest chance of being able to gather for a new swipp/baldwin/familiar item

AduroTri I'd advice to look at which food items or digging/scavenging items you need for Baldwin and Swipp, and try to gather them now. You have a lot of food points, so no fear for them running out. However, it does become harder to get specific items when you level up, so try to get the easiest ones now and move them to vault for later. I never really noticed that I need White-eared hummingbirds (meat items) to get Black-wing hummingbird familiar from Swipp and it was a long journey to collect all 175 birds. If I had done it earlier, it could have been easier.
Perhaps try to get something specific from all 6 so you don't overlever something, but if you don't really care about them, I'd still go for it because you could sell them (for example Juvenile Prairie-skinks in auction house) and earn a lot of treasure or gems! By that you will level up too.
