Honestly, I don't know why it's not an option already. So long as you keep the cooldown, as you say, I don't see a downside to it.
I don't think canon matters for this, to be honest. It could easily be explained away with a simple case of gameplay/story segregation.

This would be great, especially for lairs that have dragons that shouldn't be bred (g1s, lore reasons, etc.). As for lore, those unhatched eggs aren't just magically appearing, are they?

I mistakenly bred two of my fav dragons who were honestly never supposed supposed to be bred lore wise and I don't understand why this isn't an option yet

Seeing how oversaturated the dragon market is, anything to keep dragons from hatching could help calm it down a little. Plus, accidental breedings exist and can completely ruin a dragon's value so this has my total support.

I have had many situations where I've accidentally hit the wrong mate right before hitting accept (I always check previews before confirming, but sometimes I hit something, and well, accidents happen).

support! sometimes i regret putting a pair on a nest and have to wait for a long time until i can put them out
i'm okay with keeping the breeding cooldown if you cancel

There actually doesn't HAVE to be any canon for it. I have often thought this would be a wonderful way to explain the unhatched eggs everyone keeps finding. Abandoned nests, beastclans stealing the eggs, mislaid nests (I could totally see a dragon with my memory doing this... wandering away from the nest and then forgetting where they put it) etc...
