Cats evolved in and were domesticated by humans in desert conditions, which is why their predeliction for fish (especially tuna) was puzzling to humans. They studied this and have discovered the differences in how they taste umami compared to humans. They detect certain nucleic acids and amino acids differently and tuna is chock-full of the tastiest (to cats) stuff!
