Juice from one fresh lemon

Mix sugar and pectin in large saucepan on medium-high heat until sugar is dissolved. Add

strawberries and lemon juice and bring to a low boil. Stir continuously and boil for five minutes.

Let cool for two minutes then skim the foam off the top. Ladle into freezer containers and place

in the refrigerator overnight to let it cool slowly and set.

Variations: substitute one cup strawberries for one cup raspberries.
