Blueberry Pie

Pastry for double crust pie, uncooked and rolled out
Sanding or Demerara sugar (large grain sugar), optional

Preheat oven to 375 degrees F (190 degrees C). Mix cornstarch, sugar, salt, cinnamon, lemon zest, water and half of the blueberries in a medium sauce pan. Stir and bring to a boil while mashing the blueberries. Boil on low heat for five minutes. Remove from heat and stir in remaining blueberries and lemon zest.

Line pie dish with one rolled out pastry dough. Pour blueberry mixture into crust but don't overfill. With the other rolled out pastry dough, cut into strips and make a lattice top. Crimp and flute edges. Sprinkle with large grain sugar.

Bake 50 minutes or until crust is golden brown. Serve with vanilla bean ice cream.
