all my extra food, mats is pretty bare, mainly just the miscellaneous stacks of stuff that will eventually end up being thrown at baldwin, apparel has anything that's extra event or fest stuff and also gem apparel, familiars is all those I don't use and extra copies of fest ones, battle items has a few stacks of ambushes and berserkers, a single eliminate, and one of each of the lvl 12 elemental mage ability stones, skins has nothing, specialty has all my fest vista copies that wont ever sell so they just sit there, and 23 scattersights, other has all my fest currency, a few apparel bundles, some rings since I collect those, a few swipp things, and some baldwin fodder.
So basically anything i'm not looking to use or sell on the ah (or accidentally in my hoard) at the moment.

I just store some items I think are cool in there.
Someone has taken the time to collect a pile of perfectly round pebbles. Now they have the opportunity to do it again.

I use the vault as a kind of piggy bank to store treasure I can withdraw later. I also mainly toss familiars in there to make sure I don't do anything stupid with them (like accidentally throwing them away)

I've never hoarded items before but I've made it my goal to see just how much salt I can accumulate. Send me those sweet salt stacks, you wont regret it. (4968 piles of salt)
I have a ton of extra food inside there. It's mostly a precaution for when new swipp/baldwin stuff come out; I like to check my vault to see if I can make some quick money.
Also it's where my saved treasure and gems go lol I like carrying around less than 500k treasure and 100g with me so I don't impulse buy too much.
