I'm offloading right now to try and get the most bang for my buck, as people are going to be grinding soon enough to get a lot of the stuff

My guess is that gather items will increase in the following weeks (but decrease in the long term) while coli items (besides the really rare drops) will continue to decrease.
That said, I'm liquidating most things now. I had about 200-400 of each relevant item, so I did both. :P

Hmm, that’s true! Demand is probably pretty high right now, especially since the Den just came out. Maybe I’ll sell my stuff now and restock later...

The way I see it - most of the people willing to pay these highly inflated prices are already going to have paid them. Sales today are definitely slower and cheaper than they were yesterday. But the gathering items - you can't really grind for them, not at any reasonable pace. The higher your gathering skill, the worse your odds, because they're all first-wave, low skill level items. Most people will cave and buy those, and fewer people have stacks of those sitting around than they would coli foods and trinkets, so eventually supply is going to dry up - especially plant items. (Meat and seafood are more commonly gathered, and insects were a very spammed gather following Firefly's release. People dig during fests and often scavenge for eggs, but very few people forage.)
I think a lot of the people who are determined to grind those are going to give up within the next week or so, especially in those earlier tasks where people aren't just being completionists and really want that space.
OTOH, you have the gem slots as a bit of a gatekeeper - any task that costs over 50g to do, you might as well just throw gems at it instead.

yupp, me right now. I have no idea anymore which items to keep for quests, and which for Swipp... so my hoard is just full of everything ufff. as I do quest I just sell the rest hehe
