So I got an unhatched light egg from scavenging there and I ended up selling it on the AH for 300 gems, after which it got bought almost instantly. I didn't think that unhatched eggs did very much save for give you a starter gen 1, but am I wrong? Did I make some sort of massive horrible mistake by selling it instead of hatching it myself?

Nah, some people are just obsessed with dragons with no parents or offspring. Just a good way to make a quick bit of cash.

A lot of people find the aesthetic of have none in the lineage box pleasing. There's also the additional challenge of having to gene a dragon from scratch to being pretty, which can be expensive and provide something to do here.

They are also used in one of the item trades to get more den slots, but otherwise just for G1s. Unless you wanna gamble or you really want a G1 to hatch on a specific day you’re better off selling it. If you want a G1 just use the profits to buy one you already like.

Nah, selling it was the safer option. Gen 1's are a big thing for some folks since they like having projects to work towards that start from a triple basic plentiful dragon, but only if they look nice and have matching colors. The chances of getting a gen 1 from the egg that'd sell for more than the 300g you sold the egg for was very slim, less than 1% I'd say.
Some folks like to gamble on that tiny chance though, since if you get lucky you can get one worth 10k+ gems, but you're more likely to win the lottery than you are to get one that'll sell for that much (at least I think so, someone ran the numbers a while back and the odds of getting a triple-colored gen 1 with matching eyes is at least pretty close). Mostly just a money pit though, and by the time you get one worth selling for a decent sum you've probably spent 10x more than that on unhatched eggs. Not worth it in my opinion.

Some people collect the dragons from those eggs, which is why they're so valuable! Likely the low amount of them is what does it. If you have no plans to collect gen1 dragons yourself then sell all you like!
Alright, so there ISN'T any secret hidden super awesome thing about these eggs other than the whole no parents thing! One man's trash is another man's treasure I guess? Thanks for assuaging my fears :'D
Yep. Never got the appeal of hatching myself but I'm mighty glad there are enough people out there who enjoy doing it it keeps the prices steady.

To be honest one thing is special dates.
Some players forget the cheaper option of breeding exists or rather they want to start the special date by celebrating it with a Gen 1 (since your progens are considered Gen 1s and therefore kinda like a new starter)
An unhatched Egg you can pop anytime though while not being limited to breeding. It can be in your hoard for years but unless you hit the hatch option it won't go anywhere.
A lot of people even use them as placeholders like some players on tumblr mentioned an animal of theirs died so they chose a Gen 1 that matched their colors and did it from dedication or like a recent player posted that they were celebrating the wedding of their aunt.
You can even pop one in your birthday!
Me? I go with the cheaper option to this: Buy any Gen 1 with the date on their bio up on AH. It's much cheaper than the Eggs themselves (unless primal, multi or facet) plus I can see if I like the colors or not instead of being the gambler.
Edit:There is also the fact you need them for the Den
