Where do you think each dragon species comes from, if you ignore the official lore? I know each one is assigned a different territory (or not, in the case of Bogsneaks), but some of them just don't feel right.
Here's what I think: (edited to show reasoning)
Bogsneaks: Nature because Nature dragons are supposed to be wild and primal, while Bogsneaks avoid other dragons (wild). Or Water, because the like bogs/wet environments.
Coatls: Wind because feathers and ability to hold things, so they could make art and music and things.
Fae: Lightning because they are small and active, so good for making circuitry. Or Light, because they have trouble showing emotions and I associate this with Light for some reason.
Gaolers: Ice because big and furry creatures that would suit an icy landscape. Lighting because they are stated to be serious and utilitarian.
Guardians: Earth because they have charges and like to protect things (Earth dragons preserve history) and have their homes mostly as caves.
Imperials: Fire because they avoid other dragons (real life blacksmiths were often isolated from others)
Mirrors: Lightning because they are fast moving and vicious predators (see Carrion Canyon)
Nocturnes: Water because they copy everything, and Water dragons are supposed to be fluid. Wind for the same reason.
Pearlcatchers: Shadow because they love to gossip, and gossip can be used to trick people and cover up the truth
Ridgebacks: Earth because all those spines radiate heat, so they're well adapted. Also they are quite eccentric, and most historians I've met are quite eccentric. Plague because spines make for good defences in hostile environments.
Skydancers: Wind because feathers and ability to sense emotions, so they can make friends easily. Water because I link their gems to oracles for some reason (also big sea birds).
Snappers: Light because they talk a lot but preserve history and the truth. Earth also fits.
Spirals: Shadow because they are energetic and sleep sporadically, and they hunt in the dark so have 'large, sensitive eyes'
Tundra: Ice because fur. Wind because making friends and smells.
Wildclaws: Wind because creative and make lots of art. Fire because they can be quite aggressive and are bipedal so they can hold tools for metalworking.

The only ones I would really change around are coatls and wildclaws
Coatls seem kinda parroty to me so I think they seem more nature
wildclaws look like flamemather so fire.. lol

They're covered in feathers, so it's just silly that they come from fire flight. When you add to this that they communicate in a language that nobody outside of coatls understands, it's like the Flamecaller hates her children. I'd give them to HotDad, where they could fly free and not worry about their feathers catching on fire.

If you consider the legendary planet called Earth, there is a creature known as the pink land iguana that is only found on Wolf Volcano on Isabela Island in the Galapagos. Spirals are the nearest thing we have to iguanas and small lizards that might happily live and nest around volcanoes. This isn't necessarily the best choice for spirals, but the best choice for the fire flight.

The first bogsneak was created by an accident where lightning hit a cauldron. By similar logic, all breed change to bogsneak scrolls should likewise require lightning strikes. This somewhat mirrors the creation of the Stormcaller himself as he was the result of the Windsinger and Tidelord warring.
Also because bogsneaks always focus on self-preservation above all else and never communal good, it would be just another reason for the Stormcaller to be shouting at his flight to get back to work. Bogsneaks, likewise, could easily start calling him "Boss" in turn, not out of respect but to suggest that he should act more like a deity.
