I've never really understood the term "fodder flipping" very well. Is it just sniping underpriced fodder and reselling them for like a 1 or 2kt profit? Or is it buying pretty fodder and then reselling at a higher price because of their colors or genes? If anyone actively does this I'd appreciate some help defining fodder flipping.

I believe it is buying hatchlings, keeping them for a while, and selling them as adults because adults cost more.

This. Frigid fin will make fodder prices jump right now though so hatchlings will probably be only slightly below adults in terms of pricing, so its not always a profitable endeavour. You can of course, flip adults, but for a much smaller turnout. Exalting really is the best way to make money from fodder in my opinion.
