O: I figured most dragons can breath fire at a minimum, although maybe Fire flight dragons are the only ones with enough magical oomph to use it in the coliseum.

All dragons can breath their respective element Or channel it into a big smack [item=pestilent slash]

I have real trouble figuring out how Nature dragons would breathe leaves, vines, and flowers. Seems kinda painful...

Unless it's like...some sort of green mist that makes flowers grow? Yeah let's go with that...

Light and Shadow dragons are the most troublesome whenever this comes up. I can see an argument for shining a laser pointer at your enemy, but how do you hit something with no light?
