I want to get rid of several of my dragons that I still like but also not actually love anymore - but any time I undress them, in a couple of days I start missing them and remove them from AH and put them back in lair...
I know that there are people who turned full-G1 or otherwise restarted their lairs, so how did you do that?

if you look at the rest of your lair
then look at that dragon
and realize "they really don't look very good compared to the rest"
then for me, I decide that they don't spark joy and toss em in Windad's Forever Daycare

One piece of advice I've seen is to put them in a back page of your lair where you won't see them very often, and just... leave them there for a while? Though I think that's more for deciding whether you really want to get rid of them than it is teaching yourself to live without them.
What I personally do when I like a dragon but don't love them is, I'll save an image of them with all their apparel and their skin and such, and that way I can look back on them even after I've exalted them- you could even save a link to their page after they've been exalted so you could "visit" them whenever you wanted?

I would save their webpage offline as an HTML so I can always revisit them without needing to keep them on-site. That's what I'm planning to do when I complete some of my less permanent dragons. That way you can still view them exactly as they were. (Though if they have scenes, you'll probably need to save that separately.)

If you still like them throw them into hibernal den until you can come up with a better idea with them that makes you fall in love again I’d say

I exalted so I wouldn't be pining after them in a different lair or try to buy them back. Added it my lore!

I exalt so they're still linked to my account and save their ID so I can still go back and look at them. [emoji=ridgeback happy size=1] Pre-HibDen forced me to get good at this, post-HibDen I've just been letting my lair fill, oops.
