I see people talk about making millions of t during NoN?? Is there something I'm missing, what are they doing?
spam coli. collect chest items. hoard. make sure to buy off the market while the holiday is around. hoard. wait for prices to inflate and profit.

Grinding hard and prepping. If you can put away hours and hours and hours of your life, each chest you get in NOTN has around a 10% (last I checked) chance of giving you a Nocturne egg, which is worth 300kt/g each. It's a very, VERY good deal, and it's an absolute endless pit of money... if you have the time.

I'm assuming grinding for chests, which can drop rare apparel, but mostly, the coveted unhatched eggs. Generation 1 dragons are very valuable here, especially if they have good colors or a rare color pattern.
Similarly, others may be hoarding cheap dragon fodder to sell at a premium price on the AH for those grinding the Coliseum looking for chests.
Others may be referring to the fodder exalt profits they'll be making from grinding the Coliseum that much.

Honestly I just sell the chests. As someone above said there's a 10% chance to get a Noc egg which goes for 300g, so the prices of the chests usually stabilize to 30g each pretty quickly. If you can spend a decent amount of time in the coli everyday, you'll make some bank.
And at the end of the event everything but the eggs are really cheap, so I just buy what I want/need and keep the rest of the profit.

I tend to open every chest I find (love that skinner box) and then hoard the eggs until August, when I start selling them for 300g+ a pop.
I got 142 eggs last year and that's 42k gems! Assuming they all sell. They haven't been moving that fast this year. Hoping that Halloween picks things up a bit.

Generally its just selling the chests and possibly the items attached to them. Things like eggs tend to sell pretty high later in the year, and people like to buy the chests in hopes of getting a egg.

I've found that grinding hard for chests and hoping for eggs is what works best for me. You can get a ton of them if you work for it and it's an easy 300-ish gems per egg if you wait a few months to sell.

Start melting Baldwin mats in like august. If you get enough, particularly red goo/ooze/sludge and silver and gold muck, you can make Strange Chests the whole time.
You're also gonna want a coli grinding team!! And grind grind grind!!
