I saw Sister Location and immediately clicked on this. I had been waiting for this game since it was announced and I love it to death. I am totally up to discussing lore! @cryingcucumber

I feel the main reason that the characters are the animals they are..is because those are somewhat common for real childhood animatronics. Showbiz Pizza (which may have been Scott's inspiration) had several bears, a wolf (close to a fox) and a dog, as well as several bird characters.
but that's what I just think, if there's a real confirmed reason, let me know!

SO I'll start out with the basics, basically all of the main pizzerias.
In Freddy Fazbears was a murder. Five kids were killed by a man dressed in Freddy suit. He brought them to the backroom to "Meet Golden Freddy" cause it was a child's birthday. He eventually killed them all. The Puppet came in and gave them gifts which were the animatronic suits. This part was showed in a mini game.
In the "New and improved Freddy Fazbears." The children get revenge. He worked the night shift and they corner him. He discovered an old suit that you can wear. He thinks he's safe but in reality, he's not. The spring locks in the suit break and squish him to death. ???????? Yay! And that leads to Fazbear fright where Springtrap/Purple Man is trying to find the kids. That's why you use the balloon boy laughter to lure him away. He is evil...

I'm not exactly sure why Freddy is a bear. There are many possible answers like, Their favorite animatronic, What plushie they had or were holding at the time, or what they were wearing. Or the Puppet could have just randomly chose. I have no clue but I'll rewatch the mini game tomorrow for any possible answers/ Theory.
