Its not a 5-10 minute process to create all of the Pokémon. Those are new models, that would all need animations, and tons of work. I don't blame them for cutting it, it was going to happen someday with 800+ mons
They're not new models. They're the exact same models and animations that have been in existence since X+Y came out 5 years ago.
The issue isn't simply that they're cutting all the Pokemon, at least from what I've seen. The issue is that they've made absolutely no significant changes to the game to compensate. For example:
-Move animations are still incredibly simple (double kick is literally just a foot, with the Pokemon hopping)
-The animations in the wild area are incredibly lazy and the textures are garbage. Surely by now we've all seen that tree that looks straight out of Ocarina of Time.
-Megas and Z moves are cut for no discernible reason
-Dynamaxing is literally just increasing the size of the model. That's it, no fancy new models or anything there.
So basically we're getting another 3DS game on a console 3 times as powerful but this time without all the Pokemon. Plus, Gamefreak only mentioned this at the Treehouse, there's been absolutely no information in the directs about it. Essentially the whole thing (to me, and a lot of other people) feels like a shady cash grab.
EDIT: I should add that Gamefreak has straight up come forward and admitted that they care more and are focusing more on their new IPs than Pokemon. I wish Nintendo would just buy out Gamefreak's part of TPC and develop the games in house.
