I recently started a new job that is Not Great and I've been having trouble decompressing after work and on weekends I tend to just sleep and not do much.

Sorry to hear about your job. Mine can be stressful (I'm a retail worker on the front lines, dealing with customers and their moods and the messes they leave behind all day), but I love my coworkers and the management, so it all evens out.
However, I do have some pretty bad anxiety in general. I like to decompress by having a day out every week with my best friend, treating myself by eating out for breakfast and shopping in thrift stores. You can find some really neat stuff for really cheap.
Other than that, exercise. It's not fun to do in the moment, but you can work out your stresses and feel more energetic once you get into a routine. I'm still trying to make it a habit myself, which is difficult due to a pretty significant injury.

Soak in a hot bath.
Get enough regular sleep throughout the week.
Clear my mind and focus on breathing for 5 minutes.
Go for a relaxed 40 minute walk. Walking is low impact and doesn't stress the body as much as other forms of exercise, but you still get the benefits. It's more therapeutic IMO. If you play games like Pokemon Go, that can also help with motivation if you aren't into exercising.

Methods of coping really depend on what you're coping with... but for me I always like to feel like I'm being "productive" even when I'm in leisure time. Being productive could be as simple as watching a new movie or TV show, or reading a new comic, manga, or whatever. Maybe even play a new game (or in my case watch walkthroughs). Getting into something new can be really fun and helps get your mind off of your "real" life, and it doesn't feel like your time is being wasted like just sleeping or looking at social media would do. Good luck with your coping!

I tend to resort to things where I can decompress alone and meditate- something that is reflexive. For me, its strangely grinding in Minecraft or classic-WOW (harvesting herbs on a druid is so relaxing).
I put on headphones, light some nice smelling candles and get a favorite snack, some good music and call it a night.

When I was working in food service, super stressed out dealing with rude / obnoxious / crazy customers all day, my routine starting from when I got home from work (unless I had plans) was to shower quickly, then fill up the bath and soak until I felt better, then I'd put on something comfy and curl up with a blanket or just put on a snuggie, then eat dinner, and then play video games or watch tv or youtube etc. I also made sure to go to bed early and get lots of sleep, which usually wasn't a problem since I was so stressed and exhausted from work I'd always struggle not to fall asleep the minute I got home and sat down.

What I usually do is bake! I can make stuff from scratch but boxed stuff is so easy and fun. After a long day I make a boxed cake mix, if you add a pudding cup in before baking it makes it super moist :D, drink a glass of water, clean my face really good and put a nice face mask on! Then you can relax watching tv, playing a game, or listening to music and when your face mask is ready to come off you have a nice warm cake to eat! I also pet my puppies a lot :D
