Full Metal Alchemist: Brotherhood is my personal favorite! Characters are fantastically written, the story is engaging and never starts to drag, and the openings are A+++. The dub is also great so you def dont have to watch subbed unless you want to.

I read the manga, but when I started to watch the anime I just couldn’t stand his voice, (agh what’s his name? I forgot lol, I’m taking about the metal guy, Edwards brother)

Oh, Alphonse?? I mean, thats fair lmao, he did sound rather young and I can see how that could get annoying. Regardless, if you ever feel like picking it up again, it's a great watch. I binged it a few summers ago and absolutely loved it.
Besides that, Noragami is also a fun watch!! Though the anime does leave off on a cliffhanger and I don't think there are plans for a third season. The manga is also incomplete, but still fun to read (I started reading it and am not currently caught up, but it's pretty good if you are interested in reading that as well). Fun characters, an engaging story, but also gives some good laughs and has a more casual vibe while also maintaining an engaging story.
Tokyo Ghoul is also one of my favorites, and after watching the anime a few years back I actually read all of the manga, both Tokyo Ghoul and Tokyo Ghoul:RE and absolutely loved it. It was the first manga I read, and so far it has been only one of two that I have started and the only one that I actually finished, if that speaks anything for how good it is. It's definitely on the more mature side though, with a lot of blood and gore, torture, psychological horror, and just.. generally being pretty dark. Regardless, if none of the above is a deterrent for you, the anime is worth the watch and the manga is three times as good if you want to read some ~400 chapters of beautifully illustrated pages with a story that will 100% keep you on the edge of your seat.
Finally, I have to recommend Yuuri on Ice lmaoooo, the first anime that I has ever watched at the request of a friend. It is a figure skating anime and it's,,, so gay, but it's fun, it's funny, the characters are incredibly lovable, and it honestly has a very good portrayal of anxiety/depression in the main character without being cliché. It's also pretty short at only i think 10-12 episodes, so if you want something fast that you can literally. Watch in like 6 hours just for fun, this one is for you.

K Project!! It's an amazing anime with a great story, and perfect characters.
Just remember to watch the movie after the first season before you get into the second season otherwise you'll be lost as all heck. :>

If you want some light-hearted humorous anime series, Nichijou and Saiki Kusuo no Psi Nan ("The Disastrous Life of Saiki K.") are good. They're both based off of "random" humor, but it's actually funny instead of just being strange and overdone.
Nichijou is about high school students and their "everyday" lives(hence the title "Nichijou", or "Everyday" in English.)
Saiki K. is about the most powerful psychic boy in existence and how he deals with his powers and the people around him.
I'm not very good at describing(also I'm trying not to give anything away before you watch them), but these shows are good.

I fell in love with Made in Abyss! It’s a fantasy adventure anime with dark tones and fantastic worldbuilding. The art direction and ost are beautiful as well. It’s about a girl and her robot best friend exploring a dangerous world filled with wonderous creatures and strange places.
I thought The Promised Neverland was really good. There’s another season coming out this year and I’m really hyped for it! I don’t want to spoil it too much but it’s kind of like a psychological thriller. Also the opening is an absolute banger
Edit: Forgot to mention the movie A Silent Voice. I’m not an emotionally expressive person in real life. But this movie touched me so much that I was a mess at the end, it’s so sweet. Also the English dub in this movie is surprisingly really good? The character development in this movie is especially phenomenal.
