Since you mentioned liking historical shows and I didn't see it on your anime list I thought I'd recommend
Golden Kamuy. It's a historical fiction taking place in Japan's early 1900's (after the Russo-Japanese War). It's also an action adventure about gathering scattered map pieces that lead to a huge amount of gold. It's also occasionally a gourmet show about different culture's foods. The interesting bit is how it shines a light on the Ainu people, the often ignored Indigenous Japanese people.
I've never actually watched this show, but I've heard it given very high praise for balancing and mixing those genres in a wonderful blend as well as having entertaining character dynamics. It's currently available on CrunchyRoll and Funimation with two seasons (and a 3rd on the way).
I will warn you there is a bit of jarring CG but it doesn't appear often enough to dissuade most people.

If you want a slice-of-life anime about baseball, try Big Windup! (or Ohkiku Furikabutte in Japanese). I don't do the sports genre, but I really loved how this one plays out. Far as I know, it has two seasons, the first which I watched (and own) dubbed and the second subbed.

Monthly Girls' Nozaki-kun aka Gekkan Sh?jo Nozaki-kun aka GSNK makes fun of a bunch of shojo manga tropes and is really funny to watch. As someone who doesn't love watching romance a lot, it's sort of gag-an-episode format is really nice! It doesn't take itself too seriously and is wildly goofy.

I second this recommendation. It was a grand time watching this anime. The ending isn't the most satisfying, but it's not a stick in the eye.

Jojo's Bizarre Adventure
Yes, I'm that person who reccomends Jojo. It is amazing, though.
Love is War is much better than I thought
Inuyashiki, it's absolutely amazing, very underrated.
Kokoro Connect. I also think it's underrated, very wholsome and woo friendship.
Nanbaka! It's pretty silly but later on it gets a lot more serious. It's a huge favourite of mine but I don't see many people talking about it.
I'd reccomend TBHK and Gakuen Babysitters but you're already watching them I think? I think they're great but hey that's just me lol.

I don't watch anime anymore as much as I used to as a teen...
but first thing I can think of is castlevania if you have netflix?
others I still like a lot but are not really what you've asked for:
Psycho-Pass. if you watched/read death note and liked it this one might be perfect. not with anything supernatural but characters outsmarting each other and the whole society in this show gave me something to think about. The first season was way better than the second, but still good.
Ajin. the anime is much shorter than the manga (as usual) BUT the drawing style was just a big no for me.
