If you like fantasy stuff with a bit of mystery sprinkled in, then I heavily recommend Witch Hat Atelier/Tongari Boushi no Atelier and Delicious in Dungeon/Dungeon Meshi if you haven't read hem already. Both are ongoing though, so if you binge them, then be prepared for some lengthy wait times between chapters.

@Faasnu I'm gonna be very basic and reccommend Boku No Hero Academia - both the anime and manga are great. Though on the surface it's a simple premise, the way it explores all the aspects of a superhuman society, the good, bad and ugly, is incredibly well-done. The characters are written incredibly realistically, being shaped by not only their backstory but also changing and progressing as they gain experience. 10/10, probably my overall favourite manga/anime.

Dr. Stone! I love post-apoc settings that are more than just "BLAH BLAH EVERYTHINGS DEAD BLAH" so that might just be me but I really love both the manga and the anime.

I HIGHLY recommend Tsubasa Reservoir Chronicle! it starts off as a fairly typical T-rated fantasy adventure, but definitely gets to a point about two thirds of the way through where it REALLY starts pushing its rating with darker themes and violence/gore, as well as character death. also the story gets really absurd at some point and includes a time loop.
I can also recommend reading xxxHolic alongside Tsubasa or after you finish Tsubasa, since those series are closely connected and basically happen at the same time, so events between the two overlap at times. Holic is more of a comedic slice-of-life fantasy with serious parts in between, and just like Tsubasa, it gets more serious as the story goes on. some of the story, especially later on, makes more sense if you know both sides.
they are a huge time investment, but I think they're worth it.
very different type of manga: How to Treat Magical Beasts. slice-of-life, magic, medical stuff. it's about a girl who is a veterinary student but also has magic and uses her knowledge to treat magical creatures. it has some imagery of medical stuff so don't read if you're very squeamish at that sort of thing. also, like any kind of veterinary medicine series, it will have animal injury (obviously), illness, and death

I recently read Vanitas no Carte, (The Case Study of Vanitas), and it's pretty good. Definitely has it's dark side to it though. There is an anime adaptation to it, but personally, I think the manga is better. Also, Bungo Stray Dogs manga is pretty good, plus I've been reading One Punch Man and it's amazing.
