I would say the 24th, even if it's only 5 days, you can just wait one

The 25th; it takes 5 days of incubation, including the day the nest is laid, then you hatch on the sixth day.
If you're nervous about making the date or forgetting to incubate, you can always lay the nest earlier and leave it ready to hatch until the right date. It means that nest is occupied, but you're guaranteed to not miss the day, and your dragons will start their breeding cooldown sooner. There's no penalty for leaving eggs alone.
