First, decide how much site currency you want to spend on a hatchery based on the assumption you will never sell a single dragon for higher than exalt prices. For the most part a hatchery does not make significantly more than selling exalts to flights pushing for dom and actively lose currency if you start buying genes. I generally breed things I find pretty and if they sell that's great and if not I'll train and exalt them.
Second, take a look at this guide:

Here's a good beginner's guide to setting up with banners, breeding cards and whatnot:

Good luck!

I want to live in Theory. Everything works there.
Have you checked the Gem MP for Gene and Breed scrolls before buying an AH listing from me ending in 5g?

The hatcheries I like usually have banners for different things and are organized into sections that can easily be navigated to, but they also have cards for their breeding pairs with previews of offspring. You can pretty easily go into an art program to put them together or you can probably find people selling them in the art forums c: @randomraven431
