how do you change which tab you want newly hatched dragons to go in?

@1234567777 They'll always go in the first tab. You can rearrange your tabs and/or rearrange the dragons in them, but unfortunately you can't assign a "default" tab.

You can't change which tab gets new dragons, unfortunately. You can move the dragons currently in it to a different tab and then swap the names, though.

@1234567777 It's not quite true that they will always go in the first tab. When you edit your tabs you'll see that one of them has a purple arrow on it. New dragons will always go to the tab with the purple arrow, but you can rearrange your tabs to whatever order you like. In my lair for example the tab labeled Main is where new dragons go, even though it's the 4th tab in my lair.
