It really depends on what place you want to grind in. Below the Boreal Woods level, element doesn't really matter, so if you want to build your dragon for grinding there send whichever one you like the most.

For the higher-level venues, the element that matches up against mobs the best is Light (boreal woods, mire, kelp beds), Nature (harpy's roost, crystal pools), Arcane (ghostlight ruins, golem workshop). You can check to see the element of the dragon by looking at what eyes they have.

Mostly, I recommend sending in a dragon that you'd want to keep for a while :)
